Summer is almost here and it feels like its been a long time coming!

Deliciously Easy Recipe

Asparagus, Peas and Basil
1/4 cup finely chopped shallots (about 2)
1 tablespoon unsalted butter
2 pound asparagus, trimmed and cut into 1-inch pieces
1 (10-ounce) package thawed frozen peas
1/2 teaspoon fine sea salt
Handful of torn basil leaves (about 3/4 cup)

Cook shallots in butter in a 12-inch heavy skillet over medium heat, stirring frequently, until just tender, about 4 minutes.

Stir in asparagus, peas, sea salt, and 1/4 teaspoon pepper, then seal skillet with foil. Cook over medium heat until vegetables are tender but still slightly al dente, about 8 minutes. Stir in basil and sea salt to taste.

Makes 6 servings.
Per serving: 122 calories, 6g fat (4g saturated), 15mg cholesterol, 214mg sodium, 14g carbohydrates, 5g fiber, 6g protein

SELF poll reveals 65% of American women are disordered eaters Some of you may have seen the article published in SELF magazine last month regarding a 4000 person survey which showed that 65% of American women are disordered eaters. Eating habits that many women think are normal – banishing carbohydrates, skipping meals and going on low calorie diets – may actually be symptoms of the syndrome. Disordered eating may not be as lethal in the short term as anorexia and bulimia, but it can wreck your emotional and physical health.

The SELF survey reveals that an additional 10% of women suffer from outright eating disorders. This means that a total of 75% of all American women – three out of four – eat, think and behave abnormally around food.

The survey found that women in their 30s and 40s suffer from disordered eating at virtually the same rate as those in their teens and twenties.

Dieting can be physically and psychologically harmful. Even skipping a meal can cause emotional symptoms within hours. Malnutrition from low calorie diets (less than 1200 calories) can cause osteoporosis, hair loss, brittle nails and even nerve damage. They can also cause loss of sex drive, lowered metabolism, irritability and bingeing. Some people can have symptoms on less than 1400 calories per day. And this food restriction does not produce long term weight loss results.
